– ½ cup (110 g) Egg whites (divided into two portions) – 1 ½ cup (150 g) Almond flour – 1 ½ cup (150 g) Powdered sugar (confectioners/icing sugar) – 2.5 tablespoons (30 g) Fine sugar – ⅔ cup (120 g) Granulated sugar – ⅕ cup (50 g) Water
EQUIPMENT
You will need a rubber spatula, a stand mixer with a whisk attachment, a sugar thermometer, piping bags with a round tip, silicon baking mats, and a digital oven thermometer.
