Easy Homemade Pho Recipe For your Dinner Date

What You Need
- Bok choy (4)
- Beef stock
- Salt
- Sweet jalapeño peppers
- Rice noodles (200g)
- Prawns (or replace with chicken if you prefer)

Prep Your Veggies
First, you’ll want to prep your vegetables. Take your bok choy and slice it up, not too thin and not too thick. You want the pieces to hold their shape but still be easy to eat in the soup.
Next, cut your sweet jalapeño peppers into small pieces. These will add a little spice and sweetness to the broth, which makes the pho taste great.
Prep Your Broth
Now it’s time to get the broth going. Add beef stock to your boiling water, about 250-300 ml for two people. If you’re making extra for the next day, just double the amount. Stir the stock into the boiling water until it’s fully dissolved.
Toss in your sliced jalapeños and bok choy and let everything simmer for a while. I like to give it enough time for the jalapeños to release their flavor into the broth. Let it cook for a few minutes while you work on the other ingredients.
Prep Your Prawns
While the broth is simmering, it’s time to get your prawns ready. I like to use fresh or frozen already cooked prawns for convenience. Peel the prawns, removing the heads, tails, and shell so they’re ready to add to your pho.
If you’re using chicken instead of prawns, you can either cook it separately or simmer it in the broth until it’s done.
Cook the Noodles
Now, cook your rice noodles. They usually take about 5-7 minutes in boiling water. You can check the package instructions, but most rice noodles cook pretty quickly. Once they’re done, drain them and set them aside while the broth finishes simmering.
Time to Plate
Now for the best part: assembling your pho. Start by adding your cooked noodles to a bowl. Pour the simmering broth with the bok choy and jalapeños over the noodles. Then, top it off with your peeled prawns (or chicken if you prefer).
Final Touches
For some extra flavor, you can add optional toppings like bean sprouts, a squeeze of lemon or lime, or fresh herbs like mint or coriander. It’s up to you how simple or dressed up you want your pho to be.
