Ingredients
For the chicken:

- 150 g / 1 ¼ cups all-purpose flour
- 100 g / 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt

- 500 ml / 2 cups vegetable or canola oil, for frying
For the buffalo sauce:
- 120 ml / ½ cup hot sauce (such as Frank’s RedHot)
- 30 g / 2 tablespoons unsalted butter, melted

For the coleslaw:
- 200 g / 2 cups shredded green cabbage
- 100 g / 1 cup shredded red cabbage
- 1 medium carrot, julienned or grated (about 60 g)
- 60 ml / ¼ cup mayonnaise
- 1 teaspoon apple cider vinegar
- Salt and pepper, to taste
To assemble:
- 4 small baguettes or crusty sub rolls, split lengthwise
- 60 ml / ¼ cup garlic aioli or ranch dressing, for drizzling

Step 1: Marinate the Chicken
- Place the halved chicken breasts in a bowl and pour the buttermilk over them.
- Cover and refrigerate for at least 20 minutes (up to overnight if you have the time).

Step 2: Set Up Your Breading Station

- Set the sauce aside; it should be pourable but slightly glossy.
Step 5: Toss the Chicken in Buffalo Sauce
- While the chicken is still warm, dip or brush each piece generously in the buffalo sauce.
- Make sure the sauce coats the crispy coating evenly without soaking it through.
Step 6: Make the Coleslaw
- In a large bowl, combine the green cabbage, red cabbage, and carrot.
- Add the mayonnaise and apple cider vinegar, then toss until everything is evenly coated.
- Season with salt and pepper to taste and set aside.
Step 7: Assemble the Sandwich
- Split each baguette lengthwise, keeping one edge attached like a hinge.
- Drizzle the inside of the bottom half with the garlic aioli or ranch dressing in even lines.
