Ingredients
For the pumpkin cake:
- 190 g / 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda

- 200 g / 1 cup granulated sugar

Step 1: Prepare the Pan and Oven
- Preheat your oven to 175°C / 350°F.
- Line a 23 x 33 cm / 9 x 13-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
Step 2: Mix the Dry Ingredients
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
Step 3: Mix the Wet Ingredients
- In a large bowl, whisk together the granulated sugar, brown sugar, and eggs until smooth.
- Add the pumpkin purée, vegetable oil, and vanilla extract, and whisk until fully combined.
Step 4: Combine the Batter
- Add the dry ingredients to the wet ingredients and fold gently with a spatula until just combined.
- Stop mixing as soon as no streaks of flour remain.
Step 5: Bake the Cake
- Pour the batter into the prepared pan and spread it into an even layer.

- Lift the cake out of the pan using the parchment overhang.
