We’ve been eating a lot of salads during the summer and I’ve finally had enough last night! I mean, I love them still, but a little bit of change never hurt anyone. So I decided to share another recipe thatโ€™s perfect for summer: the Healthy Tuna Base Pie. Really, it’s perfect for all year round! This dish is light, refreshing, and super easy to make.

What to Do

Step 1

Open your canned tuna and pour it into a bowl.

Step 2

Add the 3 eggs and a spoon of baking powder. This will create the dough for the pie base, turning it into a sort of tuna bread. Make sure to give it a good stir.

Step 3

Pour your mix into your oven-friendly dish and bake in the oven for about 12 minutes at 200ยฐC (392ยฐF).

Step 4

While your tuna bread is baking, start cutting the cherry tomatoes in half and slice the pepper thinly. Chop the jalapeรฑo as well.

Step 5

Create your cucumber tagliatelle. First, remove all the skin. Then, using the peeler, peel thin slices of cucumber.

Step 6

Take your tuna bread out of the oven and let it rest for a couple of minutes.

Step 7

Add a layer of yogurt on top. You can make this as thick as you like. If you prefer more yogurt, make sure to only cover the parts you will be eating immediately to prevent the bread from getting soggy.

Step 8

Add your toppings in the order and style you prefer. I went for a circular design, but feel free to get creative. Donโ€™t forget to add the sun-dried tomatoes! I like them whole, but you can chop them if you prefer.

Step 9

Season with salt and pepper as desired. You can even add a splash of balsamic vinegar for extra flavor!

Eric wasnโ€™t sure at first what my vision would turn into, but he rated it a 10/10, so I guess I will continue making up recipes!
