These no bake date cookies are BIG win in our household! I’m not a huge fan of dates but with the dark chocolate and almond butter, these are absolutely delicious. My husband is also a fan, but that’s not hard to believe considering he has the biggest sweet tooth ever haha!
When you need a quick and easy dessert that feels like a treat but still uses wholesome ingredients, these no-bake date cookies are perfect. They’re chewy, chocolatey, and just the right amount of sweet without any added sugar.
You don’t need flour, eggs, or any binding ingredients because the dates do it all. This recipe is great if you want a fast dessert or snack that looks impressive but doesn’t take much effort.
They also work great for kids’ lunchboxes, post-dinner sweets, or even as a pre-workout bite if you’re into that. The almond butter adds creaminess and richness, and the little sprinkle of salt keeps the sweetness balanced. If you like to batch prep your snacks, you can double the recipe and keep some in the freezer.

Tips for Perfect No-Bake Date Cookies
- Use soft medjool dates – If your dates are a little dry, soak them in warm water for 5–10 minutes before using. This makes them easier to flatten and gives a better texture.
- Flatten evenly – Use a piece of parchment paper and a glass to press down on the dates so they’re uniform in thickness. This helps the chocolate spread evenly on top.
- Melt chocolate slowly – When melting the chocolate with almond butter, use short bursts in the microwave to avoid burning. Stir between each round.
- Add water carefully – If the melted chocolate mixture is too thick, add a very small amount of water until it spreads easily. A little goes a long way.

Ingredients
- 10 medjool dates, pitted
- 1 cup chocolate chips
- 1 tablespoon almond butter
- A small pinch of salt
- Shredded coconut, for topping
Instructions
1. Pit and Split the Dates
Remove the pits from your medjool dates. Gently split each date open down the middle without cutting them in half completely.
2. Arrange the Dates on Parchment Paper
Place the split dates on a sheet of parchment paper, leaving space between them.
3. Flatten the Dates
Place another sheet of parchment paper over the dates. Use the bottom of a glass to press down and flatten each date into a round, even shape.
4. Melt the Chocolate and Almond Butter
In a microwave-safe bowl, melt the chocolate chips and almond butter in short bursts, stirring in between. If the mixture is too thick, add a splash of water until smooth and spreadable.
5. Spread the Chocolate Mixture
Spoon or spread the melted chocolate mixture over each flattened date.
6. Sprinkle with Coconut
Top each one with a pinch of shredded coconut for flavor and texture.
7. Chill in the Fridge
Place the tray in the fridge for 30 minutes until the chocolate has hardened.
How to Store No-Bake Date Cookies
Store the cookies in an airtight container in the fridge for 3–4 days. They’re best enjoyed cold, straight from the fridge.
If you want to store them longer, freeze them in a single layer in a freezer-safe container. When you’re ready to eat, just transfer them to the fridge the night before to thaw. They’ll be ready to go the next day and taste just as good.
