If you want something that looks impressive but takes less than 15 minutes to pull together, these Salmon Cucumber Bites are it. They’re fresh, light, and perfect for days when you want a little snack that feels fancy with zero cooking involved.

I love serving these when people come over—they give off appetizer energy without the stress of actual prep. Plus, anything with smoked salmon just automatically feels a little elevated, right?

The combo of cool cucumber, creamy herbed cheese, and silky salmon is always a win. And those poppy seeds on top? They’re tiny, but they add a nice bit of texture and color. These bites also work great on brunch boards, especially if you want something that isn’t bread-based but still feels substantial.

Tips to Make Salmon Cucumber Bites

  • Try to cut the cucumber slices evenly so everything stacks nicely and doesn’t wobble.
  • Pat the cucumber slices dry to keep the cream cheese from slipping off.
  • Use cold cream cheese straight from the fridge if you want clean, defined piping. If you don’t have a piping bag, just use a zip-top bag with the corner cut.
  • You can assemble these 1–2 hours ahead, but keep them chilled so the salmon stays fresh.

  • 1 cucumber
  • 2–3 tablespoons cream cheese
  • 100g smoked salmon
  • Salt (pinch)
  • Black pepper (about ¼ teaspoon)
  • Oregano (about ¼ teaspoon)
  • Poppy seeds for topping

Alternative Ingredients

If you don’t have poppy seeds, you can use sesame seeds or finely chopped fresh dill. Goat cheese or whipped ricotta would work instead of cream cheese for a stronger flavor. And if you’re not into smoked salmon, swap it for thinly sliced turkey or leave it off for a vegetarian version.

Step 1: Prep the Cucumber

Wash the cucumber thoroughly. Slice it into 1cm-thick rounds and pat each piece dry with paper towels.

Step 2: Cut the Salmon

Slice the smoked salmon into small square pieces that will sit neatly on top of each cucumber slice.

Step 3: Make the Cream Cheese Mix

In a bowl, mix cream cheese with salt, black pepper, and oregano until smooth and seasoned to your liking.

Step 4: Pipe the Cream Cheese

Fit a piping bag or ziplock bag with a 1M star piping tip and fill it with the cream cheese mixture. Pipe a swirl onto each cucumber slice.

Step 5: Top and Finish

Place a salmon square on top of the cream cheese, then sprinkle each bite with a pinch of poppy seeds.

How to Conserve Salmon Cucumber Bites

These are best served fresh, but you can prep the parts ahead. Slice the cucumber and store it in a container with paper towels to absorb moisture.

Keep the cream cheese mixture chilled in a piping bag or container until ready to use.

If you’ve already assembled them, cover them tightly and store in the fridge for up to 12 hours. Any longer and the cucumber starts to release water, which makes everything a bit soggy.

How to Serve Salmon Cucumber Bites

These are perfect for parties, brunches, or anytime you want a light starter that doesn’t require cutlery. I like pairing them with other finger foods on a tray—cheese cubes, olives, maybe a few crackers and dips.

They also work great as a protein snack for the afternoon slump. If you’re serving them for brunch, add them to a board with mini bagels, boiled eggs, and fresh fruit.

You could even turn them into a low-carb lunch plate alongside a hard-boiled egg and some avocado. They look beautiful and they’re packed with flavor, which makes them one of my favorite easy wins.
